Food For Thought – Corn And Tomato Salsa

This a really great and healthy salsa. I love it with tortilla chips as well as on burritos.

Ingredients 

  • 3 Roma tomatoes
  • 1 medium ear of corn, boiled
  • ½ medium white onion, diced
  • 1 tablespoon lime juice
  • ½ cup cilantro, chopped
  • ½ teaspoon cumin, toasted and ground
  • ½ teaspoon salt
  • ½ teaspoon pepper

Directions

Dice tomatoes. Remove corn from cob. Combine tomatoes, corn, onions, cilantro, lime juice, cumin, salt, and pepper.

Options

If you prefer heat in your salsa, try adding one diced jalapeno pepper or 1 tablespoon of Sriracha.

For a sweeter salsa, chop one mango and add.
