Food For Thought – Banana Bread

I make really, really good banana bread.

I already ate those three slices.


  • 1 and 1/2 cups bread flour
  • 2 medium bananas, preferably very ripe
  • 2 eggs
  • 1/2 cup Crisco
  • 3/4 cup sugar
  • 3/4 teaspoon baking soda
  • 1 and 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla


Preheat oven to 350F.

Mix together dry ingredients and then add wet ingredients. Mix together thoroughly. Batter should be the consistency of a thick cake batter.

Grease a bread pan and pour batter into pan.

Bake for 45 minutes.


You can substitute 1 – 1 and ½ cups of shredded zucchini in place of the bananas if you prefer.

To make a vegan version, try using an egg substitute or replace the eggs with an extra banana.

A large handful of pecans or walnuts can add a tasty crunch.
