Food For Thought – Potato Soup

Looking for a creamy, hearty soup for the colder weather? This potato soup recipe is perfect.

Ingredients Bowl of Potato Soup

  • 12 medium potatoes
  • 1 cup cream
  • 2 cups vegetable stock
  • 3 tablespoons butter
  • ½ cup green onions, diced
  • 4 cloves of garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper


Boil potatoes until soft. Drain the potatoes and mash them. Add the remaining ingredients and cook over a low heat, stirring frequently, for 1 hour.


If you prefer a smoother texture in your soup, puree in a food processor rather than mash. You can also peel the potatoes before you boil them.

For a thinner soup, add 1 cup of milk.

Bacon is a delicious addition to this soup.
