- 12 medium potatoes
- 1 cup cream
- 2 cups vegetable stock
- 3 tablespoons butter
- ½ cup green onions, diced
- 4 cloves of garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
Boil potatoes until soft. Drain the potatoes and mash them. Add the remaining ingredients and cook over a low heat, stirring frequently, for 1 hour.
If you prefer a smoother texture in your soup, puree in a food processor rather than mash. You can also peel the potatoes before you boil them.
For a thinner soup, add 1 cup of milk.
Bacon is a delicious addition to this soup.
