At the moment, I’m using canned tomatoes. I’d like to start using fresh tomatoes eventually but this is my recipe for the time being.
- Two cans of diced tomatoes (200mL)
- Two cans of tomato paste (50mL)
- Two chopped shallots
- 3 cloves of garlic
- 1 tablespoon of oregano
- 1 tablespoon of basil
- ½ tablespoon of bay leaves
- ½ tablespoon salt
- 2 tablespoons sugar
- One can of mushrooms (200mL)
- 1 diced leek
Mix together in a pot and bring to a boil. Let simmer, stirring frequently, for at least an hour.
