HDW recommended this recipe, which she found to be really successful. I rather enjoyed it. I regularly make quiche, and I liked this so much more than my quiche recipe that I think I’m going to use this instead and bake it in a pastry shell.
- 2 bunches green onions, finely chopped
- 4 tablespoons butter
- ½ pound fresh spinach, trimmed
- 3 tablespoons minced fresh parsley
- 6 eggs
- ¼ cup Greek yogurt
- ½ teaspoon salt
- ¾ cup shredded sharp cheese
- ¼ cup grated Parmesan cheese
Directions
In a large skillet, saute onions in butter for 2 minutes or until tender. Add spinach and parsley; saute 3 minutes longer or until heated through. Remove from the heat and set aside.
In a large bowl, beat the eggs, yogurt and salt until smooth. Stir in the spinach mixture and cheddar cheese. Pour into a greased, glass 9 inch round glass baking dish. Sprinkle with Parmesan cheese.
Bake, uncovered, at 350° for 25-30 minutes.
