I started with a recipe I found on the Meatless Mondays site.
- 1-1/2 lbs Zucchini, Shredded
- 1 Large White Onion, Shredded
- 2 Cloves Garlic, Crushed
- 1/4 Cup Of Grated Parmesan Cheese
- 1 Egg
- 3 Tablespoons Flour
- Oil For Frying
Mix all of the ingredients together. Heat oil to 350. Drop a large spoonful of batter into the oil. Fry until golden brown on both sides, flipping as needed. If the mixture is too runny, add more flour.
Serve with chopped fresh tomatoes if you like.
