Out of the John Hopkin’s School of Public Health comes “Meatless Mondays.” From the website: “Our goal is to help reduce meat consumption 15% in order to improve personal health and the health of our planet.”

You may have noticed that my recipes have had less meat lately. I have been cutting back on the amount of meat that I consume, though I was never a big meat eater. It’s healthier and cheaper.

This piece talks about how Meatless Mondays are saving money. According to the calculations of one couple, switching from chicken to tofu is saving them $548 per year. That’s rather impressive.

The recipes look tasty, I’m going to have to try a few.
